Staten Islander turns former school bus into mobile restaurant

New York’s Staten Island Uniquely flavored crepes, bubble tea, and enough pink décor to make Elle Woods blush are all promised at a new eatery on the North Shore.

By adding taro, Thai tea, and matcha fillings, Madame Rose Mobile Creperie offers a distinctive spin on the traditional French crepe, with a presentation that is best described as a floral nightclub on wheels.

According to restaurant owner Peter Botros, who founded Madame Rose with business partners Roshan Weerasinghe and Juan Maldonado, there is a lot of overlap between bubble tea and crepes. In addition to providing bubble tea, we create crepes using many of the traditional bubble tea flavors.

Getting on the road

The restaurant, which opened on November 9 and is located on Richmond Terrace just outside Empire Outlets, has a distinctive flare thanks to the fact that it was constructed out of an old school bus. Maldonado was hired to build the space after Botros and Weerasinghe created the floor plan.

The Madame Rose team claims that the bus is self-sufficient and functions as a completely functional RV, complete with internal seating for eighteen people, running water, a functional restroom, heat, air conditioning, and all the amenities one would find at a physical location, according to Botros. It also uses an electric grid powered by solar panels.

Botros, who owns a number of eateries on Staten Island, including Violette’s Cellar in Grant City and Blue Pearl in St. George, said, “You can drive this thing wherever, park it, and live your life.”

Previously, Botros, Maldonado, and Weerasinghe collaborated to convert an old school bus into an AirBnB, thus this is not the team’s first mobile business venture.

But why a bus for a restaurant?

Following a presentation from Stephen, Maldonado’s 17-year-old son, the three came up with the concept to operate a creperie. After failing in their first attempt to find a storefront, Botros and Weerasinghe changed course when they saw another used school bus up for sale.

Madame Rose Mobile Creperie was the result of three months of labor.

According to Botros, they acquired and repurposed items to make the bus suit the available area. Outside the bus, there are 35 to 40 seats in addition to six indoor booths.

On the menu

Currently, the food truck, in its neon-lit, bright pink magnificence, offers four savory crepes and four classic sweet crepes. The cuisine is every foodie’s dream and promises a taste of France.

According to Botros, the specialized crepes constructed with unusual ingredients like matcha, taro cream, and Thai tea cream are the show-stoppers.

The coconut taro crepe is stuffed with whipped cream, toasted coconut, blueberries, strawberries, and taro cream. Nutella, banana, strawberries, and toasted almonds are combined with powdered sugar and a salted caramel drizzle in the Banana Bliss. Matcha cream, lemon, pineapple, and whipped cream are all ingredients in pineapple matcha. The Caramel Thai is stuffed with salted caramel, whipped cream, toasted almonds, and Thai tea cream.

Other crepes include the Morning Commute, a breakfast crepe that is served all day and contains scrambled eggs, bacon, and melted cheddar; and the Cookie Butter Smores Crepe, which is filled with chocolate chips, marshmallows, Biscoff cookie crumbles, cookie butter drizzle, and Amoretti white chocolate with a side of whipped cream. Spicy mayo and scallions are used as garnishes.

Madame Rose serves house-made tea, bubble tea, hot coffee, cold brew, hot chocolate, and a variety of soft drinks to wash it all down.

Crepes range in price from $10 to $14 per. Customers will be assigned a number and urged to place their orders at the counter located to the left of the bus entry. The company has a six-month contract with Empire Outlets, but beyond that, the possibilities are endless, Botros told Advance/SILive.com.
